Banana bread muffins
Wet ingredients
- 3 large ripe bananas mashed
- 2 eggs whisk till pale
- 100 ml vegetable oil
- 120 g sugar
- 1 tsp vanilla extract
Dry ingredients
- 220 g plain flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 40 g oats blitzed to fine
Crumble topping
- 60 g all-purpose flour
- 50 g sugar
- 30 g brown sugar
- freshly grated lemon zest
- pinch of salt
- 60 g unsalted butter freeze and grate frozen
- Flavouring of your choice (powders, syrups, chocolate, seeds, nuts, fruit, nut butters etc.)
